Beefy Quesadillas

The ultimate Superbowl snack!

Beefy Quesadillas

Searching for the ultimate Super Bowl appetizer? These beefy quesadillas are quick to make and always a hit with the crowd! 

Prep Time: 15 mins

Cook Time: 20 mins

Ingredients:

1 tablespoon butter

1/2 cup diced tomatoes

1/2 cup diced bell pepper (any color)

1 garlic clove minced

salt & pepper

1/2 lb ground beef

1 tablespoon of taco spices

1/3 cup refried beans

10 inch flour tortillas

1 1/2 cup grated Monterey Jack cheese

Guacamole, Pico de Gallo sour cream, green onions to serve

 

Directions: Start with the filling. 

🏈 Melt butter in a large skillet.

🏈 Add onion, bell pepper, and tomatoes. Then, saute until the onion is almost translucent and the bell pepper is soft about 3 mins.

🏈 Season with salt and pepper.

🏈 Add garlic and cook until fragrant.

🏈 Add ground beef and taco seasoning to the skillet.

🏈 Break up the beef and cook until it is no longer pink. Takes about 5 minutes. I use lean beef, so there's no need to drain. Ground turkey is a great substitution!

🏈 Stir in refried beans. Once well combined, turn off the heat and put the mixture in a bowl. We are using this same skillet to cook quesadillas. You could also use a cast iron pan or flat top.

 

Second, Assemble and Cook!

🏈 Add small amounts of butter if desired if you think your quesadilla will stick.

🏈 Place tortilla in skillet on medium heat.

🏈 Spoon 1/2 cup of beef mixture on the tortilla.

🏈 Add 1/2 cup of cheese.

🏈 Close the tortilla into a half-moon shape and let it brown for about 4 minutes. Flipping halfway through cooking time.

 

Grab the guac, pico, and sour cream, then sprinkle with green onion. Now, you have made a share-worthy Super Bowl appetizer. Enjoy! 🏈🏈👨‍🍳👨‍🍳

 

We can also suggest some substitutions that our team has tried. You can use ground turkey instead of ground beef, but it's best to choose the 85/15 ratio. It has more flavor.  You can use black beans or pinto beans instead of refried beans.  You could add corn or other vegetables and adjust the amount of taco seasoning, salt, and pepper to ensure the result is still flavorful. This is such a versatile recipe, and the possibilities are endless!
